Chloe’s Raspberry Coconut Slice
1 cup plain flour
1/2 cup brown sugar
1/2 cup desiccated coconut
125g butter, melted
3/4 cup Dick Smith Magnificent Spreadable Raspberry
1/2 cup caster sugar
2 cups desiccated coconut
1. Preheat oven to 180°C (fan-forced). Grease an 18cm x 28cm slice tin and line with baking paper.
2. To make the base, mix together flour, brown sugar, coconut and melted butter in a bowl and press into the slice tin. Bake for 15 minutes, then allow to cool for 5-10 minutes. Spread warm base with ¾ cup Dick Smith Magnificent Spreadable Raspberry.
3. To make topping, combine eggs, sugar and coconut together in a bowl then then spread on top of jam. Bake for 25 minutes or until golden. Cool in pan then lift and out and cut into pieces to serve.
